Banana Bread Brownies – Quick, Easy & Delicious

The texture is not quite brownie and not quite banana bread. It’s kinda’ in between. Like I said it’s a hybrid. Not exactly a fudgy brownie and not exactly cake-like as in banana bread. It’s really in a class by itself!
The flavor is outstanding. When you first bite into one your first thought is a brownie. But then as you chew your thought changes to banana bread.
The chocolate is certainly the dominant flavor, especially if you add chocolate chips to the top but there’s no missing the banana flavor. It just takes a bit for it to kick in.
It’s like a brownie and banana bread got married and had a child and that child inherited characteristics from both parents. The best characteristics of both parents!
How To Make Banana Bread Brownies
Making these brownies couldn’t be easier. There’s not really anything special even though this is a hybrid recipe.
Essentially you just combine the wet ingredients and in a separate bowl mix the dry ingredients. Then just add the dry ingredients to the wet and blend together, pour into the pan, and bake.
The only thing you must do is to ensure you have as close to 1 cup of mashed bananas as possible, as too little will make your bars dry.
Other than that one precaution you really just mix together the ingredients and bake.

Banana Bread Brownies
Ingredients
- cooking spray
- 1 cup mashed ripe bananas
- 1/3 cup sugar
- 1 large egg
- 3 tablespoons unsalted butter melted and cooled to room temperature
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/3 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/3 cup semisweet chocolate chips optional
- 1/2 cup chopped nuts optional
Instructions
- Preheat the oven to 350 degrees F. Line an 8x8-inch baking pan with parchment paper, leaving an overhang on 2 sides. Coat paper lightly with nonstick spray.
- Place mashed bananas in a bowl. Stir in the sugar, egg, butter, milk, and vanilla extract until well blended.
- Stir flour, cocoa powder, baking soda, and salt together in a separate, smaller bowl. Add to the banana mixture and mix until incorporated. Fold in chocolate chips if using.
- Scrape batter into the prepared pan and smooth out the top.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 16 to 20 minutes.
- Lift out of the pan using the parchment paper overhang; place onto a cutting board. Slice into bars and let cool.
Brown Butter Frosting
Brown butter frosting is an easy to make frosting recipe as long as you’re careful not to burn the butter. It’s an old recipe that’s not used much anymore but it’s great as frosting for these brownies.
Brown Butter Frosting Recipe
1/2 cup butter
3 cups powdered sugar
1 1/2 teaspoons vanilla extract
3 tablespoons milk
Heat the butter, stirring constantly, in a saucepan over medium-low heat until it browns and becomes very aromatic, 5 to 10 minutes. Whisk the confectioners’ sugar into the butter until dissolved and remove the saucepan from the heat; stir in the milk and vanilla extract.
Beat the butter mixture using an electric mixer until the frosting is smooth; add more milk if the frosting is too thick.
Pour the frosting over the warm banana bread brownies immediately, and smooth with a spatula, butter knife, or frosting spatula.
Cool completely before cutting.
Freezing Banana Bread Brownies
If you want to freeze these, a great idea is to cut them up and wrap them individually. That way, you can take them out one at a time for a snack instead of thawing them all at one time.
I find these disappear super fast in my house, so if you want some to freeze some you may have to make 2 pans.
