Pancake Mix Banana Bread – Only 3 Ingredients
This Pancake Mix Banana bread is the easiest I’ve ever made. Even though it’s easy it’s not a scaled-down version that doesn’t deliver on flavor.
This is delicious banana bread!
What makes this banana bread so easy is the pancake mix. I’m talking about the complete type pancake mix, not a regular pancake mix.
The regular pancake mix is more like self-rising flour with sugar added.
The complete mix has everything already in it that you would add if you were making a loaf of more conventional banana bread. It has flour, leavening, salt, sugar, eggs, and dairy. It’s just all in powdered form!
Now the bananas are a big factor in the flavor department of any banana bread. You must use over-ripened bananas for the best flavor in any recipe for banana bread. Even this easy one.
I’ve made this recipe several times since I discovered it and I know if you’ll just use black bananas the banana flavor is awesome.
It can also be made with some variations. Add a spoonful of fresh ground cinnamon for that beautiful hit of spice, as well as a touch of vanilla. Sometimes, well most always, I also like to add a big handful of pecan pieces.
How To Make Banana Bread With Pancake Mix
Mix the ingredients carefully. I use a wooden spatula and mix just until everything comes together. Be aware that you’re not making pancakes. You don’t want a pancake batter. You want a quick bread dough. Not like yeast bread dough but more like biscuit dough. Solid and yet still on the gooey sticky side.
If your banana bread comes out dry and dense it’s probably because you over-mixed it. That’s easy to do without even thinking about it.
With banana bread or any sweetbreads or muffins for that matter, you should always just stir to moisten. Never overdo it or you’ll end up with a drier and denser bread or muffin.
Baking Tips
Bake the bread at 350 degrees for about an hour to an hour and fifteen minutes. That should do it. But you need to be aware of where your oven rack is located. If it’s too high the bottom will not cook correctly, too low and it burns before the middle is cooked through.
I position my rack one notch below the center and it comes out perfectly. You will most likely have to experiment with your oven to find the best location. Ovens are not all the same!
Test with a toothpick. Test in several places so you don’t mistakenly hit a piece of banana and think it’s underdone.

This Pancake Mix Banana Bread could not be any easier! It’s moist, delicious, and so incredibly simple that you can whip it up in 5 minutes, and then bake it in the oven.
Pancake Mix Banana Bread Recipe
Pancake Mix Banana Bread is just about the easiest banana bread ever!
Ingredients
- 2 cups Complete Pancake Mix
- 3 Bananas over-ripened
- 3/4 cups Water
- Cooking Spray
Instructions
- Preheat your oven to 350 degrees F.
- Peel the bananas and add to a large mixing bowl. Mash up the bananas with a potato masher or a fork. Keep some chunks as this will help to keep the bread extremely moist and textured.
- Add the pancake mix and the water to the mashed bananas. Mix to combine. If it is still too dry, add another tablespoon of water until the dry ingredients are all moist.
- Pour into a bread pan that has been sprayed with a little extra virgin olive oil
- Bake in the oven for 60 minutes or until a toothpick placed into the center of the bread comes out clean.
- You can start checking at 50 minutes. If the toothpick comes out wet the first time, put the bread back in for 5 more minutes at a time until done.
- After the bread is done, let it sit for 10 minutes in the pan before removing it. Then let it cool for another 30 minutes before slicing.

On Your Own: Banana Crumb Topping
Sometimes I like to add a crumb topping to banana bread. Not just this Pancake Mix Banana Bread but any banana bread recipe. Here’s a good crumb topping mixture if you’d like to give it a try.
Brown Sugar Cinnamon Crumb Topping
⅓ cup packed brown sugar
2 tablespoons all-purpose flour
⅛ teaspoon ground cinnamon
1 tablespoon butter
In a small bowl, mix together the brown sugar, 2 tablespoons flour, and cinnamon. Cut in 1 tablespoon butter until the mixture resembles coarse cornmeal. Sprinkle the topping over banana bread prior to baking.
If you’ve never made crumb toppings before, here are some tips:
The butter has to be just the right temp/consistency. Not straight out of the fridge, and not melted. Soft to touch, but still cold.
Just barely combine the crumb ingredients… it is supposed to be crumb-like… kind of like soft slightly damp sand. You should be able to squeeze it in your hand and have it hold together.
This simple crumb topping is divine and I wouldn’t trade it for the world.
