This Southern Egg Salad Recipe is just one of many that lay claim to the title of "Southern". This is one of the better ones though. Absolutely delicious!

Ingredients

  • 6 hard cooked eggs
  • 4 ounces cream cheese room temperature
  • 2 tablespoons butter room temperature
  • 3 tablespoons mayonnaise
  • 2 tsp yellow mustard
  • ¼ cup minced onion
  • ¼ cup minced celery
  • ¼ cup shredded cheddar cheese
  • 2 tablespoons sweet pickle relish
  • ½ t salt
  • ¼ t fresh cracked pepper

Instructions

  1. Dice the eggs with an egg dicer. You can use a pastry blender or a fork but the results won't be the same.
  2. Add the onion, celery, cheddar cheese and pickle relish to the diced eggs and combine well.
  3. Combine the cream cheese, butter, mayonnaise and mustard. Fold the cream cheese mixture into the egg mixture.

Recipe Notes

It's ready to serve at this point, however you will have a more flavorful egg salad if you refrigerate it for a while to let the flavors blend!
